Ingredients
  

  • 150 g White sesame seeds
  • 200 g Sugar
  • 100 ml Light corn syrup
  • 30 g Unsalted butter
  • 1 lemon Lemon zest
  • 1 tsp Ground cinnamon
  • ½ tsp Ground ginger
  • ¼ tsp Salt
  • 200 g Greek yogurt optional
  • 2 tbsp Honey optional
  • (for garnish) Fresh mint leaves optional

  • Wooden spoon

  • Heatproof mixing bowl

Method
 

  1. In a saucepan over medium heat, combine the sugar, light corn syrup, and salt. Stir until the sugar dissolves and the mixture starts to boil.
  2. Reduce the heat and allow the mixture to simmer without stirring for about 4-5 minutes, until it reaches a light amber color.
  3. Remove from heat and quickly stir in the butter, lemon zest, ground cinnamon, ground ginger, and sesame seeds until well combined.
  4. Pour the mixture onto the prepared baking tray and spread it out evenly with a spatula. Be careful, as the mixture will be very hot.
  5. Let the brittle sit at room temperature for about 30 minutes to harden.
  6. Once set, use a sharp knife to break the brittle into neat pieces.
  7. For the yogurt cream, mix the Greek yogurt with honey in a bowl until smooth and well-combined.
  8. Serve the brittle pieces drizzled with yogurt cream and garnish with fresh mint leaves.
