  • 200 g rolled oats
  • 100 g all-purpose flour
  • 150 g brown sugar
  • 100 g unsalted butter, melted
  • 2 large eggs
  • 1 tsp baking powder
  • Zest of 1 orange
  • Zest of 1 lemon
  • ½ tsp vanilla extract
  • 1 pinch salt
  • 50 g chopped nuts (e.g., walnuts, almonds) optional
  • 50 g dried cranberries or sultanas optional

  • Baking tray (approximately 20x30 cm)
  • Chef's knife
  • Greaseproof paper
  • Zester or grater for lemon

Method
 

  1. Preheat the oven to 180°C (350°F). Line your baking tray with greaseproof paper for easy removal later.
  2. In a large mixing bowl, combine the rolled oats, all-purpose flour, brown sugar, baking powder, and salt. Stir until well mixed.
  3. In another bowl, whisk together the melted butter, eggs, orange zest, lemon zest, and vanilla extract.
  4. Pour the wet ingredients into the dry mixture and stir until fully combined. If using, fold in the chopped nuts and dried fruit at this stage.
  5. Pour the mixture into the prepared baking tray, spreading it evenly with a spatula.
  6. Bake in the preheated oven for 25 minutes or until the edges are golden and the center feels set to the touch.
  7. Remove from the oven and allow it to cool in the tray for about 30 minutes, then transfer to a wire rack to cool completely.
