- Preheat the oven to 180°C (350°F). Line your baking tray with greaseproof paper for easy removal later.
- In a large mixing bowl, combine the rolled oats, all-purpose flour, brown sugar, baking powder, and salt. Stir until well mixed.
- In another bowl, whisk together the melted butter, eggs, orange zest, lemon zest, and vanilla extract.
- Pour the wet ingredients into the dry mixture and stir until fully combined. If using, fold in the chopped nuts and dried fruit at this stage.
- Pour the mixture into the prepared baking tray, spreading it evenly with a spatula.
- Bake in the preheated oven for 25 minutes or until the edges are golden and the center feels set to the touch.
- Remove from the oven and allow it to cool in the tray for about 30 minutes, then transfer to a wire rack to cool completely.

If you prefer a nut-free version, simply omit the nuts and perhaps add a few more dried fruits for added texture.
