Ingredients
  

  • 500 g ground beef
  • 4 large whole wheat pita breads
  • 200 g asparagus, trimmed and cut into 2 cm pieces
  • 150 g carrots, grated
  • 3 tbsp sumac
  • 2 tbsp olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • lemon wedges for serving
  • (for garnish) fresh parsley, chopped optional
  • (for the side salad) diced tomatoes optional

Method
 

  1. In a frying pan over medium heat, add the olive oil and sauté the onion until translucent, about 5 minutes.
  2. Add the minced garlic and ground beef, cooking until the beef is browned, breaking it up with a wooden spoon (about 7-10 minutes).
  3. Stir in the grated carrots and asparagus, then add the sumac, salt, and pepper. Cook for another 5 minutes until the vegetables are tender but still crisp.
  4. Remove from heat and let the filling rest for about 5 minutes.
  5. While the filling is cooling, warm the pita breads in a dry frying pan or oven until pliable.
  6. Carefully open each pita and fill with the beef and vegetable mixture.
  7. Serve the stuffed pitas cut in half with a side salad of mixed greens and wedges of lemon for squeezing on top.
