- In a frying pan over medium heat, add the olive oil and sauté the onion until translucent, about 5 minutes.
- Add the minced garlic and ground beef, cooking until the beef is browned, breaking it up with a wooden spoon (about 7-10 minutes).
- Stir in the grated carrots and asparagus, then add the sumac, salt, and pepper. Cook for another 5 minutes until the vegetables are tender but still crisp.
- Remove from heat and let the filling rest for about 5 minutes.
- While the filling is cooling, warm the pita breads in a dry frying pan or oven until pliable.
- Carefully open each pita and fill with the beef and vegetable mixture.
- Serve the stuffed pitas cut in half with a side salad of mixed greens and wedges of lemon for squeezing on top.
