In a food processor, combine the pitted dates, chopped almonds, lemon zest, lemon juice, and honey. Pulse until the mixture is well combined and sticky.
Line a baking sheet with parchment paper.
With damp hands, scoop out small amounts of the mixture (about 20 g each) and roll them into balls. Place them on the prepared baking sheet.
If desired, roll each ball in additional shredded coconut to coat.
Chill the candy bites in the refrigerator for at least 30 minutes to help them firm up.
Serve chilled, garnished with more lemon zest or coconut flakes if desired.
