  • 300 g Medjool dates, pitted
  • 60 g almonds, chopped
  • Zest of 1 large lemon
  • 2 tbsp lemon juice
  • 1 tsp pure vanilla extract
  • 50 g unsweetened shredded coconut
  • Pinch of sea salt (to enhance flavor) optional
  • Extra coconut flakes for rolling optional

  • Blender or food processor
  • Baking tray (lined with parchment paper)

  • Rolling pin (for flattening mixture)

Method
 

  1. In a food processor, combine the pitted Medjool dates, chopped almonds, lemon zest, lemon juice, and vanilla extract. Pulse until a sticky, well-combined mixture forms. You may need to scrape down the sides occasionally.
  2. Once combined, transfer the mixture to a mixing bowl. With slightly damp hands, take small portions of the mixture and roll them into 2 cm balls.
  3. Place the rolled date balls on a lined baking tray. Flatten each ball gently and roll them in shredded coconut to coat evenly.
  4. Place the tray in the refrigerator for 30 minutes to allow the flavors to meld and the candies to firm up.
  5. After resting, remove from the refrigerator and enjoy! Serve chilled or at room temperature, garnished with a sprinkle of additional coconut if desired.
