- In a food processor, combine the pitted Medjool dates, chopped almonds, lemon zest, lemon juice, and vanilla extract. Pulse until a sticky, well-combined mixture forms. You may need to scrape down the sides occasionally.
- Once combined, transfer the mixture to a mixing bowl. With slightly damp hands, take small portions of the mixture and roll them into 2 cm balls.
- Place the rolled date balls on a lined baking tray. Flatten each ball gently and roll them in shredded coconut to coat evenly.
- Place the tray in the refrigerator for 30 minutes to allow the flavors to meld and the candies to firm up.
- After resting, remove from the refrigerator and enjoy! Serve chilled or at room temperature, garnished with a sprinkle of additional coconut if desired.
