- In a food processor, combine the pitted dates, lemon juice, lemon zest, vanilla extract, and sea salt. Blend until a smooth paste forms, scraping down the sides as needed (about 2-3 minutes).
- Once blended, transfer the mixture to a mixing bowl. If desired, fold in the chopped nuts for added texture.
- Using your hands or a cookie scoop, form small balls (about 20g each) from the mixture and place them on a parchment-lined baking sheet.
- Roll each ball in shredded coconut to coat, pressing lightly to ensure the coconut adheres well.
- Once all the bites are formed and coated, place the baking sheet in the refrigerator for at least 30 minutes to set.
- Serve chilled or at room temperature, garnished with additional lemon zest if desired. Enjoy!
