- Begin by placing the pitted Medjool dates in a food processor. Blend until smooth and creamy. You may need to scrape down the sides a couple of times.
- Add the shredded coconut, lemon zest, lemon juice, vanilla extract, and salt to the food processor. Pulse until everything is well combined and the mixture is sticky.
- Line a baking sheet with parchment paper.
- Using your hands, take small amounts of the date mixture and roll them into bite-sized balls, about 2.5 cm in diameter.
- Roll each ball in extra coconut flakes until well coated. Place on the prepared baking sheet.
- Once all the bites are rolled, transfer the baking sheet to the refrigerator for 30 minutes to set.
- Once set, serve immediately or store in an airtight container in the refrigerator for up to a week.
