Method

  4. Using your hands, take small amounts of the date mixture and roll them into bite-sized balls, about 2.5 cm in diameter.
  5. Roll each ball in extra coconut flakes until well coated. Place on the prepared baking sheet.
  6. Once all the bites are rolled, transfer the baking sheet to the refrigerator for 30 minutes to set.
  7. Once set, serve immediately or store in an airtight container in the refrigerator for up to a week.
