  • 50 g almonds, finely chopped
  • Zest of 1 large lemon
  • 30 ml fresh lemon juice
  • 1 tsp vanilla extract
  • 50 g unsweetened shredded coconut
  • Additional coconut flakes for rolling optional
  • Pinch of sea salt optional

Method
 

  1. In a food processor, combine the pitted Medjool dates, chopped almonds, lemon zest, fresh lemon juice, and vanilla extract. Blend until the mixture forms a sticky, cohesive dough.
  2. Taste the mixture and adjust the lemon zest or juice if more zing is desired.
  3. Scoop out small portions of the mixture, approximately 15-20 grams each, and form them into bite-sized balls or squares.
  4. Roll each piece in the unsweetened shredded coconut to coat evenly. For a more pronounced coconut kick, you can also roll the bites in additional coconut flakes.
  5. Place the finished candy bites on a baking tray lined with parchment paper and refrigerate for at least 30 minutes to firm up.
