- Place the pitted Medjool dates and raw almonds in the food processor. Pulse until a crumbly mixture forms.
- Add the lemon zest, fresh lemon juice, shredded coconut, honey (if using), and vanilla extract to the mixture. Process until fully combined and sticky.
- Using your hands, form small bite-sized balls, about 2.5 cm (1 inch) in diameter.
- Roll each ball in extra shredded coconut to coat evenly, adding pistachios as a topping if desired.
- Place the finished candy bites on a parchment-lined baking sheet and refrigerate for at least 30 minutes to firm up before serving.
