  • 200 g Medjool dates, pitted
  • 100 g raw almonds
  • Zest of 1 large lemon
  • 2 tbsp fresh lemon juice
  • 50 g unsweetened shredded coconut
  • 1 tbsp honey
  • 1/2 tsp vanilla extract
  • Extra shredded coconut for rolling optional
  • Finely chopped pistachios for garnish optional

Method
 

  1. Place the pitted Medjool dates and raw almonds in the food processor. Pulse until a crumbly mixture forms.
  2. Add the lemon zest, fresh lemon juice, shredded coconut, honey (if using), and vanilla extract to the mixture. Process until fully combined and sticky.
  3. Using your hands, form small bite-sized balls, about 2.5 cm (1 inch) in diameter.
  4. Roll each ball in extra shredded coconut to coat evenly, adding pistachios as a topping if desired.
  5. Place the finished candy bites on a parchment-lined baking sheet and refrigerate for at least 30 minutes to firm up before serving.
