Ingredients
  

  • 200 g rolled oats
  • 150 g yogurt (plain or vanilla)
  • 50 g honey or maple syrup
  • 30 g coconut oil (melted)
  • 1 tsp peppermint extract
  • 1/4 tsp salt
  • 50 g chopped nuts (such as almonds or walnuts)
  • 30 g shredded coconut optional
  • Fresh mint leaves for garnish optional

Method
 

  1. Preheat your oven to 180°C (350°F). Grease the baking dish with cooking spray or line it with parchment paper.
  2. In a mixing bowl, combine the rolled oats, coconut oil, yogurt, honey (or maple syrup), peppermint extract, and salt. Mix well until the ingredients are thoroughly combined.
  3. Fold in the chopped nuts (and shredded coconut if using) until evenly distributed.
  4. Transfer the mixture into the prepared baking dish, pressing it down firmly to create an even layer.
  5. Bake in the preheated oven for 25 minutes or until the edges turn golden brown.
  6. Once baked, remove from the oven and let it cool at room temperature for 30 minutes to set properly.
  7. Cut into bars once cooled, and garnish with fresh mint leaves if desired.
