  • 100 g 100 g fresh spinach, chopped
  • 1 tbsp 1 tbsp unsalted butter
  • Pinch of salt
  • 2 tbsp 2 tbsp whole milk
  • Grated cheese (e.g. cheddar or mozzarella) optional

Method
 

  1. In a mixing bowl, whisk together the eggs, whole milk, and a pinch of salt until well combined and slightly frothy.

  3. Add the chopped spinach to the skillet and sauté for about 1–2 minutes, or until wilted and soft.
  4. Pour the egg mixture over the spinach in the skillet. Stir gently, allowing the eggs to start setting.
  5. Continue cooking, stirring slowly, until the eggs are barely cooked through and creamy, about 5–7 minutes. Remove from heat.
