Ingredients

  • 500 g all-purpose flour
  • 100 ml warm water
  • 50 ml vegetable oil
  • 50 g granulated sugar
  • 1 tsp salt
  • 1 large egg (for egg wash)
  • 1 kg tart apples (such as Granny Smith), peeled and thinly sliced
  • 150 g pitted dates, finely chopped
  • 50 g walnuts, chopped
  • 1 tsp cinnamon
  • 30 g butter, melted
  • Powdered sugar (for dusting)
  • Whipped cream or vanilla ice cream for serving optional

Equipment

  • Heatproof mixing bowl
  • Food processor or plastic bag & rolling pin (for biscuits)
  • Baking tray
  • Sharp knife
  • Pastry brush

Method

  1. In a mixing bowl, combine flour, sugar, and salt. Gradually add warm water and vegetable oil, mixing until a dough forms. Knead for about 5-7 minutes until smooth. Cover and let rest for at least 30 minutes.
  2. In a separate bowl, toss the sliced apples with chopped dates, walnuts (if using), cinnamon, and melted butter. Ensure all apple slices are well-coated.
  3. On a floured surface, roll out the rested dough as thinly as possible. It should be almost transparent.
  4. Spoon the apple and date mixture onto the rolled-out dough, leaving about 5 cm of the edges bare. Carefully roll the dough, tucking in the sides as you go to enclose the filling.
  5. Preheat your oven to 150°C (300°F). Place the strudel on a baking tray lined with parchment paper and brush with egg wash. Bake for 2 hours until golden brown and fully cooked.
  6. Allow the strudel to rest for about 15 minutes after baking before slicing into portions.
  7. Dust with powdered sugar and serve warm, alongside whipped cream or a scoop of vanilla ice cream if desired.

Notes

Feel free to substitute the tart apples with sweeter varieties if you prefer a less tangy flavor.
Experiment with dried fruits like raisins or apricots in place of dates for a different twist.
The strudel can be stored in an airtight container in the refrigerator and reheated in the oven at a low temperature to maintain its crispness. Enjoy the blend of classic flavors and modern creativity!
