- In a mixing bowl, combine the pitted Medjool dates, lemon zest, lemon juice, chopped almonds, and sea salt.
- Transfer the mixture to a food processor and blend until a sticky paste forms, about 1-2 minutes. A few small chunks of almond can remain for texture.
- If using, line a baking sheet with parchment paper.
- With damp hands, take small portions of the mixture (about 15 g each) and roll them into bite-sized balls, then roll in desiccated coconut or any other desired topping.
- Place the rolled bites on the baking sheet.
- Once every bite is rolled, refrigerate for at least 30 minutes to firm up.
- Serve chilled or at room temperature, and enjoy your zesty creations!
